This Taco Bell Mexican Pizza recipe is a deliciously layered, crispy tortilla pizza filled with seasoned ground beef, refried beans, melted cheese, and topped with fresh vegetables and cilantro. Perfectly cooked in an air fryer for a quick and easy meal that serves six.

  • 1 lb ground beef
  • 1 1oz packet taco seasoning
  • 12 6” soft tortilla shells
  • 1 cup refried beans
  • 8 oz Colby Jack cheese, shredded
  • 1 cup taco sauce

Toppings

  • 1 cup chopped tomatoes
  • 1 cup white onion, chopped
  • 2 jalapenos, sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Brown the Ground Beef: In a non-stick skillet over medium-high heat, brown the ground beef. Halfway through cooking, add the taco seasoning and continue cooking until fully browned. Set aside.
  2. Preheat Air Fryer: Preheat your air fryer to 350°F. Spray the air fryer basket lightly with non-stick cooking spray to prevent sticking.
  3. Assemble the Taco Pizza: Place one tortilla shell at the bottom of the air fryer basket. Evenly spread 2½ tablespoons of refried beans on it, then top with 2½ ounces of the seasoned ground beef, sprinkle some shredded cheese, and place another tortilla shell on top.
  4. Add Sauce and Cheese: Using a spoon, spread taco sauce evenly on the top tortilla and sprinkle with additional shredded cheese to cover.
  5. Cook in Batches if Needed: Depending on your air fryer size, you may need to cook the pizzas in batches to ensure even cooking and proper melting.
  6. Air Fry: Cook the assembled taco pizzas in the air fryer at 350°F for 10-12 minutes, or until the cheese is fully melted and the edges of the tortilla shells are golden brown and crisp.
  7. Top and Serve: Remove the pizzas from the air fryer and top them with chopped tomatoes, chopped onions, jalapeno slices, and fresh cilantro. Serve immediately with lime wedges on the side for squeezing.

Notes

  • You can customize the toppings by adding sour cream, guacamole, or sliced olives if desired.
  • Make sure not to overcrowd the air fryer basket to allow even cooking.
  • For a spicier version, add extra jalapenos or a hot salsa on top.
