Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and position a rack in the center. Place a metal cooling rack inside a large rimmed sheet pan to allow air circulation around the chicken while roasting.
  2. Make the Marinade: In a medium bowl, combine Greek yogurt, lemon juice, minced ginger, minced garlic, ground turmeric, chili powder, cayenne powder, ground cinnamon, ground cumin, minced cilantro, kosher salt, and freshly cracked black pepper. Mix thoroughly to create a smooth and aromatic marinade.
  3. Prepare the Chicken: Pat the whole chicken dry with paper towels. Place it breast-side down on a large cutting board with the neck facing you. Using kitchen shears, cut along each side of the spine to remove it. Flip the chicken breast-side up and press down firmly on the breastbone with your hands until the chicken flattens — you may hear a crack. This will help the chicken cook evenly.
