This classic quiche recipe offers a flaky, buttery pie crust filled with a rich and creamy egg custard, flavored with subtle spices and customizable savory additions like cheese and vegetables. Perfect as a brunch, lunch, or light dinner, this versatile dish is straightforward to prepare and bakes to golden perfection with a tender, custardy center.

Ingredients

Crust

  • 1 (9-inch) pie crust (refrigerated, homemade, or frozen)

Custard Filling

  • 4 large eggs
  • 1 cup cream (or half and half or whole milk)
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon grated nutmeg (optional)

Flavor Additions

  • 2-3 cups flavor additions such as cheese, cooked vegetables, cooked bacon, ham, spinach, mushrooms, or herbs (suggested but not specified)

Instructions

  1. Pre-Bake Pie Crust: If using a refrigerated or homemade pie crust, roll it out into a ¼-inch thick circle and fit it into a 9-inch pie pan. Trim excess dough and crimp the edges. Chill the crust in the freezer for 15 minutes or refrigerator for 1 hour to firm it up.
  2. Blind Bake: Line the chilled pie crust with parchment paper and fill it with dried beans or pie weights. Bake at 375℉ (190℃) for about 15 minutes until lightly golden and set. Remove the weights and parchment and bake for an additional 5 to 10 minutes until the bottom is golden. Allow to cool slightly.
  3. Frozen Crust Option: If using a frozen crust, bake it for 10 minutes at 375℉ (190℃) before filling. Let it cool slightly before assembling the quiche.
  4. Prepare Egg Mixture: In a bowl, whisk together the 4 eggs, 1 cup cream, kosher salt, black pepper, onion powder, and grated nutmeg until light and fluffy.
  5. Assemble Quiche: Evenly sprinkle your choice of flavor additions such as cheese or vegetables over the pre-baked crust. Pour the egg custard mixture on top. Add more cheese on top if desired. Gently tap the pan on the counter to remove any air bubbles.
  6. Bake Quiche: Bake at 375℉ (190℃) for about 35-40 minutes. After 25 minutes, check the crust and cover edges with pie shields or foil to prevent over-browning. The quiche is done when the edges are set but the center still wiggles slightly.
  7. Cool Before Serving: Let the quiche cool for at least 20 minutes before slicing to allow the custard to set properly and enhance flavor.

Notes

  • Use pie weights or dried beans for blind baking to keep the crust from puffing up.
  • You can substitute cream with half and half or whole milk for a lighter custard.
  • Flavor additions can include a variety of cheeses, pre-cooked vegetables, meats, or fresh herbs.
  • Cover the pie crust edges during baking to prevent them from burning.
  • Ensure the quiche cools before slicing for cleaner cuts.
