Ingredients

Main Ingredients

  • 1 tablespoon vegetable oil
  • 2 tablespoons grated fresh ginger
  • 2 teaspoons red curry paste
  • 1 stalk lemongrass, minced
  • 4 cups chicken broth
  • 3 tablespoons fish sauce
  • 1 tablespoon light brown sugar
  • 3 (13.5 ounce) cans coconut milk
  • ½ pound fresh shiitake mushrooms, sliced
  • 1 pound medium shrimp - peeled and deveined
  • 2 tablespoons fresh lime juice
  • Salt to taste
  • ¼ cup chopped fresh cilantro

Instructions

  1. Gather Ingredients: Collect all the necessary ingredients and prep the fresh items like grating ginger, mincing lemongrass, slicing mushrooms, and peeling and deveining shrimp.
  2. Sauté Aromatics: Heat the vegetable oil in a large pot over medium heat. Add grated ginger, red curry paste, and minced lemongrass. Cook and stir constantly for 1 minute to release the fragrant flavors.
  3. Add Broth and Seasonings: Gradually pour in the chicken broth while stirring, then add fish sauce and light brown sugar. Reduce the heat to low and allow the mixture to simmer gently for 15 minutes to meld the flavors.
  4. Add Coconut Milk and Mushrooms: Stir in the coconut milk and sliced shiitake mushrooms. Continue cooking and stirring until the mushrooms become tender, about 5 minutes.
  5. Cook Shrimp: Add the peeled and deveined shrimp to the pot. Cook until the shrimp turn opaque and are no longer translucent, approximately 5 minutes.
  6. Finish and Garnish: Stir in fresh lime juice and season the soup with salt to taste. Remove from heat and garnish with chopped fresh cilantro before serving.

Notes

  • You can substitute chicken for shrimp if preferred.
  • If fresh lemongrass stalks are unavailable, use 1 tablespoon of lemongrass paste as a convenient alternative.
  • Serve the soup over steamed rice for a complete meal.
