Ingredients

Tilapia

  • 1.5 lbs tilapia fillets
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • vegetable oil, for frying

Corn & Avocado Salsa

  • 5 oz canned corn, drained
  • 1 small tomato, cubed
  • 1 avocado, cubed
  • 1 tbsp cilantro, chopped
  • 1/2 lime, juiced
  • salt to taste

Instructions

  1. Season the Tilapia: In a small bowl, mix together smoked paprika, garlic powder, and salt. Sprinkle this spice mixture evenly on both sides of the tilapia fillets to ensure full flavor penetration.
  2. Prepare the Avocado Corn Salsa: In a large bowl, combine the drained canned corn, cubed tomato, cubed avocado, chopped cilantro, lime juice, and salt to taste. Gently mix all ingredients until well incorporated and set aside.
  3. Pan-Fry the Tilapia: Heat a frying pan over medium heat and add enough vegetable oil to coat the bottom. Fry the seasoned tilapia fillets for approximately 3 minutes on each side, or until the fish is opaque, flakes easily with a fork, and is cooked through.
  4. Assemble and Serve: Remove the cooked tilapia from the pan and place on serving plates. Top each fillet generously with the prepared avocado corn salsa. Serve immediately for a fresh, light, and delicious meal.
