Instructions

  1. Prep Ingredients: Chop the onion and mince the garlic to prepare all key aromatics ready for cooking.
  2. Sauté Onion: Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add chopped onion and sauté for about 5 minutes until translucent and fragrant.
  3. Cook Turkey: Add the extra lean ground turkey to the pot. Cook, breaking it up with a spoon, until no longer pink and fully white throughout, approximately 5 minutes.
  4. Add Remaining Ingredients: Stir in the diced tomatoes with their juices, chili powder, ground cumin, smoked paprika, dried oregano, minced garlic, diced green chilies, and drained white kidney beans. Mix thoroughly to combine all flavors.
  5. Simmer Chili: Bring the chili to a gentle boil, then reduce the heat to low-medium so it gently simmers. Allow it to cook uncovered for 15 to 20 minutes, stirring occasionally to prevent sticking and to meld flavors.
  6. Finish and Season: Stir in 1/2 cup sour cream to add creaminess and richness. Season with salt and pepper to taste. Stir well to combine.
