  • 1 egg, room temperature
  • 1 teaspoon ube extract (colored)
  • 1 teaspoon ube extract (colorless, substitute with colored if not available)

Dry Ingredients

  • 200 grams (about 1 cup) granulated sugar
  • 240 grams (2 cups) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

For Rolling

  • 1 cup granulated sugar (optional, for rolling)
  • 1 cup powdered sugar, sifted

Instructions

  1. Cream Butter, Sugar, and Cream Cheese: Fit the paddle attachment to your stand mixer and lock in the bowl. Mix the butter and granulated sugar on medium-high speed until they combine into a smooth consistency. Add the cream cheese and continue creaming until the mixture is light and fluffy, which will take about 5 to 8 minutes. Be sure to scrape the sides and bottom of the bowl halfway through to incorporate all ingredients evenly.
  2. Add Ube Extracts and Egg: Add both colored and colorless ube extracts along with the egg to the bowl. Mix on medium speed until the ingredients are uniformly combined, scraping the bowl once again partway through for even mixing.
  3. Incorporate Dry Ingredients: Add the all-purpose flour, baking powder, and salt. You may whisk them together beforehand or add them directly to the mixer bowl. Mix on low speed until just combined, and scrape the bottom of the bowl once to ensure thorough mixing. Avoid overmixing to keep the cookies tender.
  4. Chill the Dough: Cover the dough and chill it in the refrigerator for at least 30 minutes. This step helps the dough firm up for easier handling and enhances the cookie's texture.
  5. Prepare for Baking: Preheat your oven to 350°F (175°C). Line baking sheet(s) with parchment paper. Place powdered sugar in one bowl and granulated sugar in another. Rolling the dough balls first in granulated sugar then powdered sugar creates a vibrant crinkle effect with a slight sugar crunch, but granulated sugar is optional.
  6. Form and Coat Dough Balls: Using a cookie scooper or measuring about 2 tablespoons of dough each, portion out balls.
