Ingredients

Fruit Filling

  • 10 cooking apples (peeled, cored, and sliced)
  • 2 tablespoons lemon juice
  • ½ cup granulated sugar
  • ¼ cup packed brown sugar
  • 3 tablespoons flour
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon pumpkin pie spice

Pie Crust

  • 2 whole pre-made pie crusts

Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 375°F (190°C). Remove the pre-made pie crusts from the refrigerator and bring them to room temperature following the instructions on the packaging to ensure they are pliable and easy to work with.
  2. Mix Filling: In a large mixing bowl, combine the sliced apples with lemon juice to prevent browning. Add the granulated sugar, packed brown sugar, flour, cinnamon, nutmeg, and pumpkin pie spice. Stir thoroughly to coat all apple slices evenly with the spiced sugar mixture.
  3. Assemble Pie Base: Place one pie crust into a pie pan, pressing down gently to fit it into place. Pour the apple filling into the crust, allowing the sliced apples to mound and almost spill over for a generous filling.
  4. Seal Pie: Cover the apple filling with the second pie crust. Pinch the edges of the two crusts together to seal the pie tightly. Cut a small slit in the top crust to allow steam to escape, which is crucial for proper baking.
  5. Bake: Bake the pie in the preheated oven for about 50 minutes. Monitor the crust color; if the top starts to darken too much before the apples are fully cooked, remove the pie from the oven, cover the top loosely with foil, and return it to the oven to finish baking without burning the crust.
