These Vegan Christmas Cookies are a delightful holiday treat made with flour, sugar, chocolate chips, and festive vegan M&Ms and sprinkles. They are easy to prepare, vegan-friendly, and perfect for celebrating the season with a chewy or crispy texture depending on chilling time.

Ingredients

Dry Ingredients

  • 1 cup flour (120g) - spelt, all purpose, oat, or gluten free flour
  • 1/2 cup sugar (100g)
  • 1/3 cup chocolate chips (55g)
  • 12 vegan M&Ms (or additional chocolate chips)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp vegan red and green sprinkles (or holiday sprinkles of choice) (5g)

Wet Ingredients

  • 1/3 cup unsalted vegan butter or coconut oil, melted (80g)
  • 1 1/2 tbsp water (22g)
  • 1/2 tsp pure vanilla extract (3g)

Instructions

  1. Preheat Oven: If baking immediately, preheat your oven to 325° Fahrenheit (165° Celsius) to prepare for baking.
  2. Mix Dry Ingredients: In a large mixing bowl or stand mixer, thoroughly stir together all the dry ingredients, including flour, sugar, baking soda, salt, chocolate chips, and optionally the sprinkles and M&Ms or save these toppings for later.
  3. Add Wet Ingredients: Stir in the melted vegan butter (or coconut oil), water, and vanilla extract into the dry mixture to form a cookie dough. Keep mixing for 1-2 minutes as the dough may initially feel dry.
  4. Shape Dough: Use a cookie scoop or clean hands to roll the dough into balls ready for baking.
  5. Optional Chilling: For chewy cookies, chill the dough balls in the refrigerator for at least one hour or overnight. If you prefer crispy cookies, proceed directly to baking.
  6. Arrange on Baking Sheet: Place the cookie dough balls spaced apart on a greased or nonstick cookie sheet, leaving room for spreading.
  7. Bake Cookies: Bake on the center rack of the oven for about 11 minutes until set and lightly golden.
