Vietnamese Caramel Trout is a flavorful and aromatic dish featuring tender trout fillets simmered in a rich caramel sauce infused with garlic, shallots, ginger, and fish sauce. This simple yet elegant recipe captures the perfect balance of sweet, savory, and umami flavors, making it a delightful seafood entrée typically served over steamed rice.

Ingredients

Fish

  • 2 large trout fillets, cleaned and scaled

Sauce and Aromatics

  • 4 tablespoons sugar
  • 1/4 cup water
  • 3 tablespoons fish sauce
  • 3 cloves garlic, finely minced
  • 2 small shallots, thinly sliced
  • 1 teaspoon fresh ginger, grated

Seasonings and Garnish

  • 1/2 teaspoon freshly ground black pepper
  • 2 stalks green onions, chopped
  • A handful fresh cilantro, chopped

Instructions

  1. Preheat the skillet: Place a non-stick skillet over medium heat to warm it up before cooking the fish.
  2. Make the caramel sauce: In a small saucepan, combine the sugar and water. Cook over medium heat until the sugar dissolves and the mixture turns a golden caramel color, careful not to burn it.
  3. Add aromatics to caramel: Stir in the minced garlic, sliced shallots, and grated ginger into the caramel sauce. Cook gently to release their fragrant aromas without burning.
  4. Cook the trout fillets: Place the trout fillets in the preheated non-stick skillet. Pour the caramel sauce evenly over the fish, ensuring they are well coated.
  5. Simmer the fish: Reduce the heat to low and allow the trout to simmer gently for 8-10 minutes. Spoon the sauce over the fillets occasionally to keep them moist and infused with flavor.
  6. Add seasoning and garnish: Sprinkle freshly ground black pepper on the cooked trout, then top with chopped green onions and fresh cilantro for a bright finish.
  7. Serve: Serve the caramel trout immediately, ideally over steamed rice or another preferred base to enjoy the full depth of the sauce.

Notes

  • Be careful when making the caramel to avoid burning the sugar as it can turn bitter.
  • Use fresh herbs like cilantro and green onions to add freshness and color to the dish.
  • This dish pairs wonderfully with plain steamed rice to balance the rich caramel flavors.
  • Fish fillets should be handled gently while simmering to avoid breaking them apart.
  • You can adjust the amount of fish sauce to taste for saltiness and umami depth.
