Peanut Layer

  • 1 teaspoon coconut oil (optional)

  • Coarse sea salt (optional for topping)

Instructions

  1. Prepare the Dates: Line a medium-sized baking sheet with parchment paper. Slit each Medjool date lengthwise and remove the pits if they haven't been removed already. Spread the dates evenly on the parchment paper in a rectangular shape, arranging them in a 4x6 pattern or similar to create a uniform base.
  2. Spread Peanut Butter and Add Peanuts: Pour and evenly spread the creamy peanut butter over the layer of dates, making sure to cover all of them. Then sprinkle the dry roasted peanuts evenly over the peanut butter layer, adding a crunchy texture.
  3. Melt the Chocolate: Place the chocolate chips and optional coconut oil in a microwave-safe bowl. Microwave the mixture in 30-second intervals, stirring between each, until the chocolate is mostly melted. Stir well until the chocolate is completely smooth and melted.
  4. Assemble and Freeze: Pour the melted chocolate evenly over the peanut butter and peanut layer, spreading it out to cover the entire surface. Optionally, sprinkle coarse sea salt over the top for added flavor. Place the baking sheet in the freezer and allow the bark to set for 60 to 90 minutes until firm.
  5. Cut and Serve: Once set, remove the bark from the freezer and peel the parchment paper off the bottom. Transfer the bark onto a cutting board and use a large kitchen knife to cut it into pieces of your preferred size.
