Combining fluffy quinoa, crunchy pistachios, creamy feta, and bright mint and parsley, this salad is simple to prepare, flavorful, and great for meal prep or immediate enjoyment.

Ingredients

Dressing

  • 1/4 cup olive oil
  • 5 tablespoons lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground pepper

Salad

  • 2 cups cooked quinoa (or bulgur)
  • 1 (19 oz) can no salt-added chickpeas, rinsed and drained
  • 2 cups diced English cucumber
  • 3/4 cup crumbled feta cheese
  • 1/2 cup salted pistachios, chopped
  • 1/4 cup finely chopped red onion
  • 1/2 cup chopped flat-leaf parsley
  • 1/3 cup chopped fresh mint

Instructions

  1. Prepare the dressing: Whisk together the olive oil, lemon juice, sea salt, and ground pepper in a small bowl or measuring cup until well combined. Alternatively, you can place all the dressing ingredients in a jar and shake vigorously to emulsify the dressing.
  2. Assemble the salad: In a large serving bowl, combine the cooked quinoa, rinsed chickpeas, diced cucumber, crumbled feta cheese, chopped pistachios, finely chopped red onion, chopped parsley, and chopped mint. Pour the dressing over the salad ingredients.
  3. Toss and serve: Toss everything gently but thoroughly until all ingredients are evenly coated with the dressing. You can serve the salad immediately or cover and refrigerate it until ready to serve. For the freshest presentation, add the parsley and mint just before serving if preparing ahead.

Notes

  • Use cooked quinoa or bulgur as a base according to preference.
  • To reduce sodium, use no salt-added chickpeas and control the amount of salt in the dressing.
  • Add parsley and mint right before serving to keep the herbs fresh and vibrant.
  • This salad can be stored covered in the refrigerator for up to 2 days.
  • For a vegan version, omit the feta or substitute with a plant-based cheese alternative.
