Whipped Shortbread Cookies are light, tender, and buttery cookies made by beating butter and sugar until fluffy combined with flour and cornstarch. Ingredients

Cookie Dough

  • 2 and ¼ Cups All Purpose Flour
  • ¾ Cup Cornstarch
  • 2 teaspoons Pure vanilla extract (or Lemon extract or Orange extract)
  • ¼ Cup Sprinkles (of choice, non-pareils recommended)

Instructions

  1. Beat Butter and Sugar: In a large mixing bowl, using a stand mixer, beat the room temperature butter and confectioners' sugar for 4-5 minutes on medium-high speed until light and fluffy. Add the vanilla (or lemon or orange) extract and mix well. If using a handheld mixer, beat on high speed.
  2. Add Dry Ingredients: Turn the mixer to low speed and gradually add the sifted all-purpose flour and cornstarch. Beat just until combined and no streaks of flour remain to avoid overmixing.
  3. Form Dough Balls: Scoop and roll the dough into 36 equal-sized balls. If the dough feels too soft to handle, cover and refrigerate for 10-15 minutes to firm up, which will make rolling easier and prevent sticking.
  4. Prepare for Chilling: Place the dough balls on a baking tray lined with parchment or a floured plate to prevent sticking. Flatten the tops gently with a fork dipped in cornstarch or flour, then sprinkle with your choice of sprinkles.
  5. Chill Dough Balls: Refrigerate the dough balls for about 2 hours or until very firm. To speed this up, you can chill them in the freezer until firm to the touch.
  6. Preheat Oven and Bake: Preheat your oven to 300°F (150°C). Bake the cookies in batches, placing about 12 on a baking tray at a time, for 19-20 minutes or until the tops look set but not browned.
  7. Cool Cookies: Allow the cookies to cool completely on the baking tray before transferring them to a wire rack or serving plate to maintain their delicate texture.
