  • 1 tbsp butter
  • 1 medium brown/yellow onion
  • 1 clove garlic
  • 1 tsp olive oil
  • 6 eggs, lightly beaten
  • 1/4 cup milk
  • 2 tbsp fresh mint, finely chopped
  • 1 cup frozen peas
  • 75 g feta cheese
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the Oven: Set your oven to 180°C (350°F) to ensure it reaches the right temperature for baking the frittata evenly.
  2. Prepare Aromatics: Finely chop the onion and garlic to release their flavors evenly throughout the dish.
  3. Sauté Onion and Garlic: Melt the butter in a skillet over low to medium heat. Add the chopped onion, garlic, sea salt, and black pepper. Cook for about 8 minutes until the onion is translucent. Remove from heat and allow to cool slightly.
  4. Mix Egg Base: In a bowl, whisk together the eggs and milk. Stir in the finely chopped mint, frozen peas, crumbled feta, and the cooled onion and garlic mixture to combine all ingredients well.
  5. Prepare Skillet: Brush the base and sides of the same skillet with olive oil using a pastry brush to prevent sticking and to enhance browning.
  6. Bake the Frittata: Pour the egg mixture into the skillet. Place it in the preheated oven and bake for about 20 minutes, until the frittata is just slightly soft in the center.
  7. Finish with Broil: For a golden top, switch on the grill function and broil the frittata for 1 minute, watching carefully to avoid burning.

  • You can substitute the milk with any plant-based milk for a dairy-free version.
  • Frozen peas do not require thawing before adding; they will cook perfectly during baking.
